To freeze whole corn on the cob: (1) Husk corn, remove silk and wash; (2) Blanch (plunge into boiling water) for 7 minutes (for small ears) to 11 minutes (for large ears) and chill quickly in ice cold water; (3) Drain off excess moisture, and package in airtight containers or freezer bags.
To freeze whole kernel corn: (1) Husk corn, remove silk and wash; (2) Blanch (plunge into boiling water) for 4 minutes and chill quickly in ice cold water; (3) Drain, cut kernels from the cob and package in airtight containers or freezer bags.
